Apple Walnut Coffee Cake-Delicious and Heart Healthy

There is nothing I love more than a delicious coffee cake, and this past weekend I experimented with making a healthy version including apples and walnuts. It was moist, soft, and had just a bit of crunch from the walnuts. And the sweet topping made it the perfect start to a fantastic Saturday. Enjoy!

Apple Walnut Coffee Cake

Dry Ingredients:

  • 2/3 cup flour
  • 1/2 cup whole wheat flour
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • 1/4 tsp salt

Wet Ingredients:

  • 1 1/2 cup grated apple (2 small apples)
  • 1/3 cup egg white product
  • 3/4 cup granulated Stevia or other sugar substitute
  • 1/4 cup chopped walnuts
  • 1/4 cup applesauce

Topping:

  • 1/4 cup sugar in the raw
  • 1 Tbsp flour
  • 1 Tbsp whole wheat flour
  • 1/2 tsp cinnamon
  • 1 T Butter
  • 1/4 cup chopped walnuts

Directions:

  1. Spray a 9×9 inch pan with nonstick coating. 
  2. In a small bowl mix together dry ingredients.

  3. Shred apples.

  4. Combine shredded apples and egg whites.

  5. Stir in Stevia, chopped nuts and applesauce.

  6. Add dry ingredients to wet ingredients and pour into prepared pan.

  7. For topping stir together sugar, flours, and cinnamon. Cut in the butter. Stir in walnuts. Sprinkle topping over batter in pan.

  8. Bake at 350 degrees for 30-35 minutes.

Serve warm or with just a touch of butter melted on top. Delicious!

The kids all loved this cake, and it was so filling and kept us on our feet for several miles when we hiked following breakfast. Try this one out and your heart and your taste buds will thank you.

    • Totally could substitute Stevia for the topping and would achieve the same taste. The Sugar in the Raw gave it a little bit of a crisp top, but I think the flavor would be the same with Stevia.
      We hiked to Donut falls in Big Cottonwood Canyon. So fun and a great time together–even if it was 37 degrees!
